At The Cove Tasmania we make homemade soup and bread during the winter months and thought we should share our most popular recipe for you all to try at home.
PUMPKIN SOUP - Serves 10-12
1 1/2 butternut pumpkin, peeled and cut into small pieces
Optional - 1 sweet potato (reduce pumpkin by half)
2 large peeled potatoes
1 large cup of frozen onion or fresh chopped onion
1/2 teaspoons curry powder
3 teaspoons minced garlic
1 liquid chicken stock
1 packet chicken noodle soup
Pepper and salt to taste
500 ml Thickened Cream
METHOD
Put all ingredients into slow cooker
Put on high for four hours
When all vegetables are cooked
Blend with hand blender until creamy
Add cream – Blend further until all is mixed in
pepper and salt to taste ·
